Guestblogger GEORGINA on being vegan + recipe


Hey all of you!

My name is Georgina and I’m 21 (most people think I’m 14 because I’m really short) but anyway, I live in Holland, I’m mixed, I have EDS, I have a lot of tattoos, I love my animals and family, I like to work out and I’m vegan! (Don’t worry, I’m not here to turn ya’ll into vegans). So Lianne asked me to be a guestblogger and I said yes! I know Lianne from Instagram so it’s pretty cool that she asks me to be the first guest of the year!

I think it would be fun if I give you guys a little look into my vegan life (still, don’t worry). I love food and I really enjoy eating (that’s why I work out). I used to eat meat and dairy and all that stuff but one night I got nightmares, there were animals asking me why I hurt them. First I did not get it, I was an animal friend (that’s what I thought) and why I love other animals. The next day I stopped eating meat but I still ate eggs and drank milk and the nightmares were still there. And last year January first I went vegan! And believe me, I feel free and can go pet a cow and not feel guilty. I can look at a picture of a pig and feel love. Also, my health is so much better! I can do things much easier, because with EDS (Ehlers Danlos Syndrome) things are not easy, but my life is all green now! So I thought it would be nice to share a recipe, just a little snack. You can have it as lunch snack or for breakfast.

Avocado on toast with tofu

You will need:

– 1 avocado

– 1 pepper (chili pepper or madame Jeanette, chose one you like)

– 1 onion (I like red onions)

– one garlic

– one tomato

– a lemon (just a little bit)

– tofu (the whole block or just a little bit)

Tools you need:

– a knife

– a plate

– a pan

– a blender (optional)

It will only cost you 15 minutes to make!

How to make it:

First, you cut the onions and the garlic very thin (make sure not to wear mascara, the panda look is only for the panda!). Then you cut the tomato and just one part of the lemon (just a little slice) and of course the pepper. If you don’t like pepper, you can leave it out. Then you cut the avocado. Make sure to remove the pit!

Okay, you can eat this two ways. If you really like the taste of onions and garlic, you don’t have to put it in the blender. If you don’t like it as much, make sure you have a blender, put everything in it, and blend till it becomes a spread. Now you have to choose the bread you like. I like cornbread! You put the bread in the toaster and wait until it’s done. Then put the avocado spread on it (I like a lot of it on my toast). Cut the tofu and bake it for 2 minutes. You can put some herbs on it or some extra pepper. Put it on the toast with avocado spread and you can enjoy your snack!
