Recipe: Tempeh Burrito

You guys. You really need to pay attention here. I will share the most amazing and easy recipe that is both healthy and vegan. Not only that. It is my person favorite. Eversince I discovered these beauties, I have them (at least) once a week. I even fed them to my carnivore dad for lunch and he said: “I can be vegan like this.” That is saying a lot. And it is so fast and easy, too!

What you’ll need is:

  • whole wheat burritos (check the ingredient list to see if it’s really vegan)
  • fresh spinach
  • rocket leaves
  • tempeh
  • soy sauce

First, cut the tempeh in little pieces, like you would meat or tofu. Put them in a bowl with soy sauce to marinate. It really doesn’t matter much how long you let it marinate. Bake the tempeh. Put spinach and rocket leaves onto the burrito and lastly, put the tempeh pieces on it. I hope you will enjoy it as much as I do. Who needs meat anymore?
