It was my beautiful sister‘s 20th birthday (give her a follow!) and we had to celebrate with a nice, vegan, healhy-ish birthdaytreat! We got some recipe requests, so here you go!
What you’ll need:
- 500 ml orange juice
- 150 ml oil (we used coconut oil)
- 200 gr sugar
- 1 tsp vanilla
- 50 gr walnuts
- 50 gr raisins
- 1 tsp nutmeg
- 2 tsp cinnamon
- 400 gr whole wheat flower
- baking powder
- 1/2 tsp salt
- 300 gr carrots (grated)
Preheat the oven to 175 degrees celcius.
Put the orange juice, oil, sugar and vanille in one bowl.
Put the chopped walnuts, spices, raisins, baking powder, salt and flower in another bowl.
Put the dry ingredients with the liquid ingredients and mix it all together. Right now it might seem a bit too liquid or just plain weird, but don’t worry! Here is the secret: add the grated carrots. See? It’s all better now.
You can pretty much do whatever you want with it now. Make a cake or some cute little cupcakes. We made both. Then bake it 25-65 minutes (depends on how small/big you choose the cake to be).
