Hi guys, I’m back! Watching Friends and blogging about sugar cookies, just how it’s supposed to be. These cookies are a new favorite in our house. Took the last cookie? Just tell me, we’ll have new ones in about twenty minutes. It is that easy. And that good.
Now, you know I’m all for healthy food, and this one definitely does not categorize as “healthy”. It has sugar, butter and no vitamins at all. But hey, every once in a while, that’s okay. Now we just got to dial it down to actually once in a while.
Here is the basic cookie recipe:
2 cups of all purpose flour
3/4 cups of sugar
1 tsp of baking soda
1/2 cup vegan butter (isn’t this amazing by the way? It’s just like real butter) on room temperature
pinch of salt
2 tbsp non-dairy milk (I used soy)
1 tsp vanilla extract
Optional: 1 tsp almond extract
Optional: 1 tsp lemon juice or extract and some zest (a lot of it – if you like lemon like we do)
preheat the oven to 350 F
Put the vegan butter and the sugar in a bowl and mix them together. Add the extracts of choice.
Put the flour, salt and baking soda in a bowl and mix it together. Add the wet ingredients and mix it by hand. It should be a little crumbly. Add the milk. Mix it together again until it is a nice ball of dough. Cut out the cookies in any way of shape you like them to be (this is the fun part). Bake for about 10-15 minutes.
